Bornholms Andelsmejeri was founded in 1970 through a merger of the island’s last small dairies. Today, the dairy is a large, modern, and versatile workplace, producing high-quality dairy products daily. The products are not only popular locally; thanks to their international recognition, a significant portion is exported to customers worldwide.
Everything within 30 kilometers
The entire production chain, from cows grazing to milk being bottled, takes place within 30 kilometers. This is completely unique and helps keep our CO2 emissions low. In addition to a very short supply chain, the cows receive 85% self-produced or locally sourced feed. This means that we can offer you fresh, delicious dairy products with minimal environmental impact.
Firm Cheeses
In our selection of hard cheeses, we offer Havarti and Samsø, two of Denmark’s absolute favorites. It takes about 10 liters of cow’s milk to produce 1 kg of cheese, and these cheeses are characterized by their firm texture and complex flavors.
Havarti is what we call a “fished” cheese because it is scooped out of the vat before the whey is drained. This process creates a cheese with many small, irregular holes. It is distinguished by its light, slightly yellowish color and soft, elastic texture, making it ideal and beloved as a slicing cheese. We produce both the classic varieties as well as special editions with, for example, dill or jalapeños.
Samsø is a mild cheese with a creamy, slightly nutty flavor. Unlike Havarti, Samsø has fewer but slightly larger and more uniform holes. Its texture is also smooth and supple, making it well-suited as a slicing cheese.
Hard cheeses
Our hard cheese features a robust texture and a rich, full-bodied flavor, making it particularly well-suited for salads and cooking. As a category, these cheeses are characterized by their white to yellowish color and distinct lipase flavor, reminiscent of Feta—a taste that only intensifies with age.
In our hard cheese selection, you’ll find Sagnaki and Kefalotyri, which have a few irregular holes, as well as Graviera, known for its small, uniform holes.
After a careful maturation process, the cheese develops a robust texture and a deep, rich flavor—perfect for adding an extra dimension to your favorite salads and everyday dishes.
Blue cheeses
Our blue cheeses are creamy and flavorful, with a rich, tangy taste created by controlled mold cultures that mature the cheese from the inside out. Practically, this is achieved through a process where the cheeses are pierced with long needles, allowing oxygen to penetrate and develop the characteristic texture and intense aroma.
