Sourcing

Before it gets onto your plate, the Macarico products undergo a series of rigorous quality control tests which start with their origin.

Our associated producers are selected for their very high standard of quality to ensure our products are able to deliver true richness of flavour.

Fermentation Container

When the olives come into the plant as raw material they are then put through a rigorous quality control which is followed by storage in the fermentation containers prior to going thorough to the other stages of the production process.

Laboratory

The quality control is inherent to the full process from raw material to the finished product and carried out by a team of experts including all the necessary laboratory testing.

Dedicated Production Lines

The company is equipped with dedicated production lines for the purpose of processing whole olives, sliced and pitted olives, as well as a variety of stuffed olives.

Client/consumer satisfaction and loyalty is one of our main concerns and to ensure its continuity we implemented the Maçarico S.A. Food Safety and Quality Assurance.

Our products comply with our safety and quality regulations undergoing tight control throughout the production process. Starting with the incoming raw materials, at each stage through to the finished product, our laboratory tests ensure the maximum quality and consistency. The implementation of an all encompassing company quality assurance system was paramount to ensure our very high standards and as required by the food industry.

Maçarico´s hard work at achieving a high standard of quality has been rewarded with international accreditation: the IFS for ready-to-eat olives and lupin beans, as well as the ISO 22000 for pickles, sauces, culinary pastes and olive oil packaging. We have good reason to be delighted as the accreditation means potential clients preference us with confidence.

Our Products

Black Olives

Whole  Black Ripe Olives are carefully selected fruit which becomes dark/black through a process of oxidation. They are an ideal accompaniment for rich food because of their well rounded subtle flavour.

Green Olives

Whole  Green Olives are carefully selected fruit picked fully mature and of superior quality. The preservation process used for green olives gives them a unique fresh fruity flavour with a firm bite therefore they are usually a favourite.

Stuffed Green Olives

Stuffed Green Olives are carefully selected fruit picked fully mature and of superior quality. Following stone removal, they will be stuffed, which makes them an exquisite delicacy for the contrast of flavours – fruity, the fillings and other ingredients such as aromatic herbs.

Whole Tree-Ripened Olives

Natural Whole Tree-Ripe Olives are carefully selected fruit picked prior to reaching a complete mature stage and of superior quality. A favourite for their fruity flavours and firm bite with a soft fleshy texture which is so typically Mediterranean.

Whole Galega Black Olives

Natural Galega Ripe Olives are a Portuguese variety: the “Galega” olives are carefully selected fruit picked fully mature and of superior quality. They are small in size and have a very unique flavour enhanced by a natural method of preservation – this is a genuinely Portuguese flavour and our signature product.

Olive Pastes

Galega Olive Pate’ is made of carefully selected Portuguese variety “Galega ”olives which will have their stones removed to be blended in to a paste using the finest Mediterranean ingredients such as extra virgin olive oil, fresh garlic and herbs to obtain a light and aromatic fresh olive paste.

Olive Oil

This is by excellence the product of the best selection of olives blended by mechanical processes to deliver an oil of superior quality. The flavour is rich and well balanced with high notes of ripe olive. Extra Virgin Olive Oil is high in natural oils and therefore a “must” in any healthy diet.

Lupin Beans

The Macarico Lupin Beans are prepared using the best hydrated seeds of the “Lupinus albus L.”  a typically Mediterranean seed sweetened (the traditional process) to soften their sharp taste. They are highly nutritious nibbles, low in fat but rich in protein and fibre, ideal for a healthy diet.  For an even healthier low sodium snack, soak them in water a few hours prior to eating.

Pickles & Horticulturals

The Maçarico Pickles are prepared with the finest selected vegetables from the best producers working together with our technical experts. The vegetables are preserved immediately after picking to ensure freshness, natural colour and a delightful crunchy texture. What makes it special is the zesty flavour of the wine vinegar which combines beautifully with the fresh flavours of the vegetables.

Flavours of the World

The Maçarico Piri-Piri Hot Sauce is prepared with the finest selection of piri-piri peppers from the best national producers working together with our technical experts. Immediately after picking, the peppers are ground to a paste and preserved to ensure the freshness, natural colour and taste of this high quality product.

Sauces

The Maçarico Ketchup is prepared with the finest selected tomatoes from the best national producers to obtain a fully-flavoured creamy sauce – ideal accompaniment for chips and pasta.

Culinary Pastes

The Maçarico Red Pepper Cooking Paste is prepared with the finest selected peppers from the best national producers working together with our technical experts. The peppers are processed immediately after picking to ensure freshness, natural colour and a delightful sweet peppery flavour.
